Chardonnay - Woolshed

The Woolshed Chardonnay is produced from hand-picked grapes transferred quickly to press for the gentlest extraction, collecting only 600 litres per tonne. The early free run juice is transferred immediately to French oak barrels where it undergoes wild fermentation on 100% full solids, with 50% of the wine completing malolactic fermentation. These barrels are racked, filtered, and bottled after eight months, having spent the entirety of their life on lees to enhance texture, weight, and phenolics. This process results in a complex, mealy palate featuring notes of apple, lime, and ginger, complemented by aromas of apricots, lemon oil, and white flowers.
